Can a restaurant be considered a hidden gem if it’s packed all the time and it’s been there forever?

If it can be so, then Nicola Pizza fits the bill. Often dwarfed by its corporate rival’s multiple downtown Rehoboth locations, the Caggiano family pizzeria has thrilled locals and visitors alike for almost 40 years.

And for nearly that long, the signature dish of Nicola Pizza has been the famous Nic-o-boli. Consisting of ground beef, Nicola’s fat free pizza sauce and a blend of cheeses that is rolled in fat free dough, then baked in the oven, the Nic-o-boli can also be filled with a variety of pizza toppings. The local delicacy also comes in a meatless variety, and is so popular that it is used for fundraising sales by children in the area.

The unfortunate victim of the Nic-o-Boli’s popularity is the superb pizza that plays second-fiddle at Nicola. By the slice or by the pie, it is one of the beach’s best.

Also on the menu at Nicola are pastas, open-faced sandwiches, salads, fries, but the ‘boli’ still dominates, with additional varieties like the Nic-Spin-oli (with white sauce and spinach) or the Nic-e-bolito (jalapenos, tomatoes, chicken).

The restaurant itself, located on North First Street in the heart of Rehoboth Beach, is reflective of the eatery’s decades of business success, with famous faces lining the walls with quotes of praise and autographed sports memorabilia.

The other superb feature of Nicola Pizza is the ubiquitous presence of the Caggiano family. Rare is the occasion that a diner fails to see Nick, Joan, Nick Jr., or another Caggiano working the crowd to ensure the satisfaction of all of their guests.

Surely that, even above all the deliciousness,  is the key to their success.
